My Mother gifted my Sister and me with a trip to Paris a few years ago...can you imagine that? I created a list of all tthe pastry shops in Paris that I had to visit; and Pierre Hermes was at the top of the list. If you visit Hermes shop, you'll be delighted with the original and outrageous flavor combinations; raspberry and lichee, foie gras and black licorice! Here, I offer the classic dark chocolate with a salted caramel filling; the recipe straight from Hermes cookbook. The texture is remarkable; crisp on the outside, then chewy and creamy in the center. Bursting with flavor, it is an unforgettable cookie. Oh, and naturally gluten free! $18 per dozen.
